It is an average weekday, about lunch time. I am not really ready for lunch, that is, there is nothing I would really like to eat, but I am hungry, so says my tummy. I am not interested in "making some lunch" so I open the pantry to see what might be there to have quickly. Quick fix foods are usually a big disappointment to me because they always taste processed and they are not very flavorful. It is a bit of a gloomy day outside so I decide on canned soup.
Chicken with wild rice, I think maye I am drawn by the wild rice. It is soup from Aldi. I am interested to try it because I bought just the one can to give it a try. Even before I get the can open I look at it and sigh, thinking canned soup just makes me sad. I decide maybe if I put it in a small sauce pan and heat it on the stove it will at least be good and hot. I am irritated when the microwave does a better job of heating my bowl then my soup. Nothing worse then luke-warm canned soup.
The soup looks good in the pan, wild rice, nice chunks of chicken, and sliced carrots. I dip my finger in it to taste....yep canned soup ! It tastes, well...canny and salty, maybe kinda chickeny? I get an idea, I can doctor up this can of soup and maybe I will enjoy eating it. First I added some lime juice from the fridge, just the reconstituted stuff you get in a bottle. The stuff is fine, great actually, I always try to have that and lemon juice on hand. I taste the soup, mmmmm, not more canny taste. Next I added some curry powder, just a sprinkle over the surface of the broth. Again, just the yellow "what we think is curry" powder from a jar, I like the taste of it. Hmmm I am going along kinda Thai-ish.... and then I grab the oregano....I know so much for sticking to a cuisine. Oregano is strong so I just added a pinch.
My "doctored up" soup came up to a simmer so it was nice and hot. I ladeled the soup into a shallow bowl and then resisted the urge to add just one more thing because it best to just stop before you ruin your dish. I sat down to my lunch. After a few spoonfuls, I decided I was very happy with my canned soup because it tasted wonderful. The canny taste was gone, there was a bright and flavorful broth thanks to the lime and curry, the oregano provided an extra layer of flavor. The Aldi canned soup turned into a pretty satisfying lunch. I will have to add it to my regular shopping list.
